Coconut Chicken: from the Eat for Your Gut Cookbook

Ingredients:

  • 2-3 lbs organic, pasture raised chicken breast
  • 1/2 cup coconut flour
  • 1 cup of raw coconut shreds
  • 2-3 eggs
  • 3 tsp grass-fed ghee (may need more)
  • Sea salt and pepper to taste

Directions:

Place the coconut shreds in a blender or food processor to make fine. In a small bowl, whisk two eggs. On a plate add coconut flour, salt, and pepper and mix well. On a separate plate, add the coconut shreds. Coat the chicken with the coconut flour mixture, dip the chicken in the egg, and finish off with the coconut shreds.

Heat the ghee over medium heat in a saute pan. As you cook the cutlets, you may need more ghee. Saute the chicken until brown, about 2-3 minutes on each side. Enjoy!
