Try out this delicious paleo, vegan, healthy pizza!
Ingredients:
- ¼ cup of chia seeds
- 2 cups of cauliflower rice
- 1 cup of green banana flour
- 2 tbsp of flaxseed
- 2 tbsp of italian seasoning
- 1 tsp of oregano
- 2 tbsp of salt
- 1 tsp of pepper
- 2 tbsp of garlic powder
- 2 tbsp of onion powder
Toppings:
- 2 sliced roma tomatoes
- 2 cups of cheese: Daiya mozzarella, Grass Fed Mozzarella, or Goat Cheese
- 1 orange bell pepper
- 1 cup of sliced mushrooms
- 1 onion
- 2 cups of fresh Arugula
- 2 tbsp of olive oil
- 1 tsp of truffle salt
- 1 tsp of truffle oil
Directions:
Prepare a bake sheet lined with parchment paper. Preheat the oven to 400F.
Soak the chia in ¼ cup of water. Separately, add the riced cauliflower, green banana flour, flaxseed, and seasoning to a bowl and mix. Add the chia seed in and mix until a dough. You can add more water if needed.
Using a spatula, spread onto parchment paper and bake for 15 minutes at 400F. Once dry, and slightly crisp on the ends remove from the oven and start to add toppings.
Separately saute the bell pepper, mushrooms, and onion. Chop and place into a warm pan with olive oil, salt, and pepper to saute until tender.
Top with sliced tomatoes and cheese and add back into the oven until the cheese is melted. Once removed from the oven, top with the mushrooms, bell pepper and onion mixture. Lastly, top with arugula salad tossed in olive oil, truffle salt, and pepper. Drizzle with truffle oil.
