- 1 pint cherry tomatoes
- 1 1/2 cups kalamata olives, pitted
- 3 artichoke hearts, quartered
- 1 orange bell pepper, chopped
- 1/2 cucumber, chopped
- 1/2 red onion, chopped
- 1 avocado, cubed
- Juice of 1 lemon
- 1/4 cup olive oil
- 1 tsp oregano
- Sea salt and pepper, to taste
Place all ingredients into a large salad bowl. Mix together well, until the avocado breaks down slightly and the olive oil and lemon juice are well incorporated. Serve immediately or chilled.
