White Bean Avocado Salad
- 1 bag of white beans
- 1 avocado, chopped
- 1 tomato, chopped
- ½ cucumber, chopped
- ½ red onion, thinly sliced
- Juice of 1 lemon
- 2 garlic cloves
- ¼ cup olive oil
- 2 TBSP parsley leaves, chopped
- 1 tsp dijon mustard
- Himalayan salt
- Fresh ground pepper
Directions
Cook beans according to directions on bag. In a blender or Vitamix, add lemon juice, garlic, olive oil, dijon mustard, salt, and pepper and blend until smooth. In a large bowl add cucumber, onion, tomato, avocado, and cooked beans. Add the dressing and fresh parsley and mix well to serve.
